CONSISTENCIA BOSTWICK Y DISMINUCIÓN DE AGUA EN GRANOS DE MAÍZ (Zea Mays Amilácea) TOSTADOS CON MICROONDAS A DIFERENTES TIEMPOS

Resumen

En esta investigación, el producto conocido en Ecuador como “tostado”, un tipo de «snack» aborigen, fue obtenido por calentamiento mi- croondas del grano seco de maíz harinoso. Se adquirieron muestras del cultivar de maíz comercial, más utilizado para la elaboración de tostado. Se equilibró el contenido de humedad del grano a 14 g agua /100g de muestra. Se trabajó en un horno microondas a 492 w de potencia y se evaluó el efecto del tiempo de calentamiento (0; 78; 156; 234; 312 y 390 segundos) sobre la variación de la consistencia Bostwick (CB) y la reducción del contenido de agua (CA) en el grano de maíz. Se estandarizaron los resultados con respecto a los valores iniciales, determi- nados en grano crudo y se interpretó el grado de modificación del endospermo harinoso de los granos tostados con base a la variación de CB y de CA. El análisis de varianza evidenció el efecto significativo del tiempo de tostación sobre las dos variables de medición indicadas. Los resultados del análisis multivariante y de regresión simple y múltiple revelaron la validez de los conceptos aplicados para el entendimiento y la interpretación del grado de modificación producido al interior de los granos de maíz, así como, la importancia de generar mayor conocimiento en el tema de grado de modificación del grano de maíz tostado con microondas.

 ABSTRACT


In this research, the product known in Ecuador as “tostado” a type of indigenous snack, was obtained by microwave heating, using dry flour maize grain. Samples of commercial maize, most widely used for making toast were acquired. The moisture content of the grain was equi- librated to 14 g water / 100g sample. The work was carried out in a microwave oven at 492 W power, and the effect of heating time (0; 78; 156; 234; 312 and 390 seconds) was evaluated on the change in Bostwick consistency (CB) and decreased content water (CA) in maize grain. The results were standardized with respect to the initial values determined in raw grain. The degree of modification of floury endosperm of the toasted grains are interpreted based on the variation of CB and CA. The analysis of variance showed the significant effect of toasting time on the two measurement variables indicated. The results of multivariate analysis and simple and multiple regression revealed the validity of the concepts applied to the understanding and interpretation of the degree of modification produced inside the maize kernels, as well as the impor- tance of generating greater awareness on the issue of degree of modification of toasted maize with microwave.
