Abstract

Introduction: Environmental pollution caused by chemical agents constitutes a complex system that must be analyzed from an interdisciplinary point of view. The use of pesticides has put the food security of the population at risk, and with it the health, especially of those who are directly exposed. Getting worse from the second half of the twentieth century. Worldwide there are 6,400 active ingredients, which combined give more than 100,000 commercial chemicals. Only in Latin America the demand for the use of pesticides is 80%.


Objective: To expose the aspects of contamination by chemical agents, and its effects on food safety, through interdiscipline, in order to synthesize knowledge that allows understanding a problem that requires urgent responses.


Material and methods: For this, automated searches were carried out in online databases. It was ordered by relevance and time, to later condense and analyze the information from the sources.


Results: 58 scientific articles were reviewed, 56.4% study contamination by chemical agents used from different disciplines, 45% of articles related to chemical contaminants with food safety, an interdisciplinary approach being important for effective management in food safety.


Conclusion: There is an urgent need to work with a true interdisciplinary approach that allows timely decisions to be made to achieve awareness from us through knowledge and empowerment of a problem that is latent. In this sense, addressing contamination by chemical agents and its effects on food safety and therefore on the health of the population, is transcendental.
